Creamy Lemon Alfredo - Seafood Medley w/ Fettuccine

From Harvest of the Sea Kitchens

Ingredients:

1 Harvest of the Sea, Seafood Medley Blend, 20 oz.

9 oz Fresh Fettucine Noodles - I like to use fettucine noodles because they are wider. But you could use any noodles that you have on hand!

15 oz - Rao’s Alfredo Sauce

½ cup. Parmesan Cheese, Fresh Grated

3 tbsp. Fresh Parsley Leaves

3 tbsp. Extra Virgin Olive Oil

2 tbsp Butter, unsalted

1 ea. Lemon – Wedge/Slice to Flavor & for garnish

Cracked Black pepper, Malden Sea Salt, to taste

 

Method

1. Boil and cook pasta: Bring a large pot of water to boil and cook pasta according to package directions. Drain and toss with small amount of olive oil, reserve aside.

2. Seafood Medley: In a medium sized saucepan over medium high heat add the butter. Add the Medley and cook for 2-3 minutes and add the mussels the last 1-2 minutes and cook until open. Remove and set aside on a plate.

3. To Make the Creamy Lemon Sauce, Heat and stir: Add 1 tsp. butter to the saucepan and melt. Sauté lemon slices, add in Rao’s Alfredo sauce. Bring to warm Stir until smooth and creamy. Add the parmesan cheese and juice of one lemon and let simmer until it has thickened.

4. Add in pasta and seafood: Stir or Fold in pasta and seafood and blend until heated through. Serve with fresh chopped parsley and shaved parmesan cheese if desired.

5. Garlic toast if so desired to top off.
