Branzino Sliders

From Harvest of the Sea Kitchens

Ingredients:

1 each #A34001792 3.5/5 oz Branzino Fillet

1 Tbsp. Whole grain mustard

Tarragon Dill Mayo:

1/2 C. Mayonnaise

1 Tbsp. Chopped fresh tarragon

1 Tbsp. Chopped fresh dill

Salt & pepper to taste

Quick Red Onion & Cucumber Pickles

1 Cucumber

1/2 Red onion

1/4 C. Red wine vinegar

1 Tbsp. Sugar

1/2 Tsp. Salt

3 Brioche Slider Buns

 

Method

A lighter take on a quick bite favorite. Using Harvest of the Sea Branzino in place of traditional slider proteins, this full flavored slider is sure to please.

Using a mandoline or thin vegetable peeler, ribbon the cucumber, leaving the skin on for color and omitting the seedy core. Thinly slice the red onion as well. Toss with vinegar, sugar and salt. Allow to rest 15 minutes.

Using Harvest of the Sea - 3.5/5 oz. Branzino Fillets, simply dry, and portion the fillet into 3 equal pieces.

Lightly spread the thin layer of whole grain mustard on the skin side of each portion and lightly season with salt and pepper.

Pan sear on low to medium heat, skin side down. Take care to not burn the whole grain mustard 2-3 minutes. Season the flesh side of the fish and gently turn over to finish 1-2 minutes.

While the fish is cooking, combine mayo, chopped fresh herbs and season to taste with salt and pepper.

When the Branzino is ready, assemble the sandwiches as shown bellow, making sure to lightly toast the brioche buns until warm.
